Restaurant owner William Tigertt and sommelier Josh Nadel, beverage director of the New York-based NoHo Hospitality Group, took their love for Pacific Northwest Pinot Noir and launched Gothic in 2009. They crafted a Maresh Vineyard Pinot Noir in 2009, a Hyland Vineyard Pinot Noir in 2010 and a Nevermore Pinot Noir blend from three Willamette Valley vineyards which continued through the 2012 vintage.

The winery's initial production was quite small, but by 2018 produced about 4,000 cases of Pinot Noir and Chardonnay. The winery sources all their grapes.

The wines are sold through a mailing list and the winery's website store with limited retail distribution.
